One + Four = Life | January 2016

Sooooo…… I forgot about these One + Four = Life posts that I got into last year. These were pretty fun to do, though I may not get to them weekly. I’m hoping for bi-monthly because 1) other priorities and 2) my life just isn’t that exciting, sadly.

A few weekends ago, we went to Slamdance in Park City, which coincided with Sundance. If you don’t know it, look it up. Our first time there, didn’t see any movie stars other than the ones in Director’s Cut (which was crowdfunded by people like us). Crazy navigating the town and parking! We had some crappy pizza, thanks Red Bango… did some window shopping (too artsy for me) and watched the movie. It was a different experience but fun!

 

 

The beginning of the month, I had a fun girls’ night out to celebrate one of my best friend’s birthday. We went to Twiggs Bistro and Martini Bar. Had a pineapple martini (not a pic of my actual drink because I forgot to take one, but this is pretty close) and yummy food. I love going out with my two best friends! We don’t do it often enough but it always puts a smile on my face and makes me realize how lucky I am to have them in my life. Man, have we been through some crap….. LOL

This last weekend, we nerd-ed out! First, we kicked off the night with delicious wings from Wing Nuts Restaurant. We shared the bone-in wings with buffalo chips (not pictured), followed by equally amazing Sub Zero ice cream (not pictured). I love their brownie batter w/chocolate chips and cashews. Mmmmm….. Afterwards, we went to a local theater for a comedy-improv of Star Wars: The Force Awakens.

 

To finish out the weekend, and nerd out session, we went to see the actual Star Wars: The Force Awakens (again) in the theater. I really liked it the first time, in 3-D, but liked it even more this time. Perhaps because I caught some more humor and little things that I missed the first go-around. Seriously, this movie kicks ass!

Taking Stock | September

This month was kicked off by being laid off of my job, as my position was eliminated. A good and bad deal. I’ll certainly miss the money and short commute but I was unhappy there. And, it brought about a great opportunity. While job shadowing for my Health Promotion degree, I made a great contact and now have a Wellness Internship with a county office. Super excited!!!

I’ve also started another semester at school, taking Social Media Communications, Art and (still) doing Math. We’ve been on a few hikes recently and got to experience beautiful views of the fall season taking over the mountains. Not going to lie, there have been a few things that I’m struggling with recently but I’m trying to stay positive and push forward.

Cooking: healthy, low-carb chicken alfredo. Yum!

Drinking: crystal lite. I’m addicted…

Reading: Harry Potter and the Order of the Phoenix.

Wanting: for this congestion to go away

Looking: for another part time opportunity

Playing: grown up 🙂

Deciding: that I’m not ready to give up shorts and tank tops!

Wishing: my body would hurry and get back to normal. That competition was rough!

This month was kicked off by a wine tasting trip to Boise, ID. Lots of fun! The rest of month has been spent on homework (boo!), getting into my volunteer work, fun outings with friends, and settling into “normal” life after the competition and our vacation to Mexico.

Drinking: water – it’s my go to, though I don’t drink enough.

Reading: through the Harry Potter series with a flurry! Love the movies more but the books are still great 🙂

Wine Tasting – Weekend Adventure in Boise

Drove to Boise, Idaho Thursday night for our long weekend of fun. Friday we went to the Boise zoo and took a short walk around the surrounding park. I say short walk because it was 100 degrees outside. Literally.

That evening, we went on a Chuck wagon dinner train ride that went along Snake River. They were selling wine bottles for $12 each so, of course, we had to get a few 🙂

And because we didn’t indulge enough on the train, we made a late night run to Black Bear Diner. Love this place!! We had pancakes, chicken fried steak, biscuits and gravy. Our bellies were so full but it was worth it.

At our second wine stop. Tried something unique called an Ice Wine, which was actually really tasty. I look super excited for the wine!

Saturday we did a wine tasting guided tour. This was a blast! It was just us and the couple who own the tour company, so we got the VIP treatment. We visited 5 wineries and tried over 30 different wines. Got a little tipsy but we weren’t driving so we didn’t care! LOL

Afterwards, the Italian place we tried for dinner was mediocre at best so we headed to Black Bear Diner for dessert. By this time, the owner and some of the workers recognized us and came over to chat. LOL We had shakes, apple cobbler and got a choc cream pie to go then headed to the Shakespeare play “The Secret Garden”. The play was just okay, not my favorite. Good thing the chocolate pie tasted amazing after we got back to the hotel.

And, because we’re kids in a candy store…. we went back to the diner for breakfast on Sunday before heading home. We stuffed ourselves with more pancakes, Bear Claw French toast and hot chocolate. We were so full by the time we left there, I was in a coma driving home.

After splurging in Mexico and again in Boise, I’m surprised I don’t have diabetes now! But, damn, those drinks and food were goooooood! 🙂

Fun in the Sun – Mexico All-Inclusive Vaca!

A little late, as we got back from Mexico almost 2 weeks ago but still wanted to share. Had an amazingly fun time!

We decided to try out two different all-inclusive resorts. The first as Occidental Grand Xcaret Resort; overall, it was average. We stayed here because it’s next to Xplor and Xcaret. The food at each restaurant was just average. Good thing we kicked off the afternoon with some drinks!

mexico 10Saturday was Xplor day, which is an adventure park. We started on the stalagmite rafting, followed by the off road jeep then the zip lines. All were so much fun, had a blast!

Beach looks better than it was.

Sunday was Xcaret, which is like an adventure park, zoo and beach combo. The “beach” wasn’t very impressive and there were way too many people. We didn’t stay in long. The zoo animals were cool to see, especially the bat cave. We had a bat block the entrance when we were trying to leave! LOL

Checked out of Occidental on Monday afternoon and headed to  The Royal. This was an adult only all-inclusive resort and was a little more “classy” than Occidental. When we booked the room, we were able to upgrade to a Master Suite for a good price. Our suite was 1300 sq. feet, complete with 2 bathrooms, Jacuzzi tub, dual head shower, kitchen with stocked bar, etc. It was amazing, I seriously loved this room!

We got wrangled into a bike tour that same afternoon, and after 4-5 banana mamma and pina colada’s, I ended up crashing (go figure…) and scraping my knee and cutting open my toe. Way to start out!

The next day we rented a jet ski for half an hour and did the fly board, which is like having jet packs on your feet and you get to hover over the water. Both were really fun. Fly board was hard to get the hang of but tons of fun. You can get 20-30 feet above the water which is exhilarating! The rest of the day was spent at the pool and the pool bar. More banana mamma and pina colada’s! 🙂

Wednesday we did a tour that consisted of snorkeling with the turtles, snorkeling in a cenote, lunch, zip lining and the Tulum ruins. The turtles was really fun, they’re huge! The cenote was cool but extremely cold. Good thing the tour company provided wet suits. Lunch was delicious, got to try an ancient Mayan dish. The zip lining was a little scary because the platform looked questionable and we had a stick for the break. It was fun though. The Tulum ruins were cool but the mosquitos really took away from the experience. Every few seconds, you were swatting them away. It was miserable, honestly. We actually left early.

Thursday was one of my favorite days. We spent the day on our cabana at the beach and at the pool. That night, we had dinner at the Chef’s Plate, which was included in our suite upgrade (it’s normally $80/person). It was a 5 course meal full of super delicious food, wine and special made drinks by the bartender. Afterwards, we did a couple’s massage in a gazebo on the beach. It was the most relaxing massage ever in my life.

Of course, we stuffed ourselves with food and alcohol every single day of this trip. I’m surprised we’re not each 500 lbs. after this vacation, though we did pack on a little weight 🙂 Flew home Friday afternoon, worked Mon-Thurs and then left for Boise. Super fun trips, sad that they’re over! Can’t wait to see what we plan for this fall! 🙂

Flash Back – White Cheddar Popcorn

It’s amazing how a song, food, smells, etc. can take you back to a place in time. And it takes you back so much that you can recall almost every detail, feeling and thought at that time. Sometimes it’s a happy memory, sometimes not.

I experienced that feeling this week. It happened while eating a white cheddar cheese rice cake. We picked up a pack while grocery shopping this last weekend and decided to give them a try. I put protein powder on mine (shocker!) and, as soon as I bit into the cake, was transported back to fishing during my younger years. Fishing and white cheddar, you say?

Well… when I was growing up, my dad always took me fishing. It was our bonding time. He would pack all the gear and we would get up at the butt crack of dawn, then head over to the gas station for worms, soda pop, beef jerky (him) and a bag of white cheddar popcorn (me). We would driver to whatever local fishing spot seemed promising that day, get the poles ready and drop in the lines. While waiting, we would snack on the jerky and popcorn. I remember my little fingers with dirt and worm guts (from baiting the hooks) reaching in for more popcorn (gross, I know, but I didn’t care back then). If the fish weren’t biting, we would take our poles and set up somewhere else. I was impatient even back then (surprise, surprise), so after awhile I would reel in my line and just hang out with my dad and talk. I’m sure he hated me scaring the fish away 🙂 but he never stopped me, just told me to whisper.

Before this week, it had been ages since I’ve had white cheddar anything. Passing the popcorn bags in the grocery store has always made me smile but biting into that rice cake knocked me back into my childhood.

For me, these are happy memories and ones that I will always cherish.

One + Life = Four | June 18

I’ve been a little behind on my life posts, these last few weeks have been pretty busy. So, here’s a quick recap of everything since my last post on June 7th. (Big breath!) Started adjusting back to “real” life after the comp, it’s still weird not working out as much but I’m loving the fact that I love being at the gym again and don’t see it as a chore. We had a BBQ with our friends last Wednesday, tried some elk burgers and saw their new (well, 6 month old) little boy. It was a fun few hours! Last weekend, we did some things around the house, checked out some tile for our kitchen backsplash and did some relaxing. This week has been spent getting ready for Mexico, we leave tomorrow!!! So excited!!

Okay, this is from a few Sundays ago but it’s a cute pic that I wanted to share. After the gym, we decided to spend a little time at the local pool a few blocks from our house. It was fun walking around the little lagoon area and walking under the water. It was nice to enjoy the warm weather and spend time just kicking back with the hubs.

It was a combo lunch, for my father-in-law’s birthday and an early Father’s Day for my dad since we’ll be gone on the actual day. It’s always great spending time with our wacky family and friends!

VideoAnd last night, I was fortunate to get recruited for some workout videos by an old friend who is super awesome. It was spur of the moment and I had tons of fun!Here’s a pic of one portion of the video. It will be used for marketing purposes for his personal training business. Really glad I was able to do this and, hey, it never hurts to get my face out in the world! 😀

flyingThis will be us tomorrow, on our way to Mexico! We’ll be staying at two different resorts in Playa Del Carmen – I can’t wait for some fun in the sun!!! After the stress of the last few months, between work and the competition, this is a much needed vacation and I’m super excited!
