One + Four = Life | March 2016

Welcome to another One + Four = Life posts! Honestly, this month has flat out sucked just a little. It started out great (see below), then turned to crap when I caught the super fun bug name pneumonia. And then passed it on to my husband last week. So, yeah, this month has been a little lackluster on the activity front.

The first weekend of the month started out f*cking fantastic. We stayed in SLC on Saturday night, had some pre-drinks, followed by an awesome dinner at The Melting Pot (one of the martinis is picture, along with my husband’s lips), walked around, went to a piano bar then a comedy show. Seriously, one of my all-time favorite nights out. It was great to cut loose, get away for the night, and have some laughs and loads of fun with my partner in crime.

 

littlesThen shit hit the fan when I started feeling sick a few days later. A couple Instacare visits and a chest x-ray later, I was told it was pneumonia. So I’ve spent the last 3 weeks (literally) sick and unable to do anything. Not so much fun when you feel like total crap, hurt, can’t go to the gym (still) which is one of the most painful parts of this whole ordeal 🙂 and can’t concentrate on homework. Good thing my little girl kept me company during many a lazy day on the couch. Let me just say that day time tv SUCKS and I went through 2 seasons of The Golden Girls. Don’t judge, it’s one of my all-time favorite shows on this earth. This has been pure hell.

 

 

Any other time of the day, we’ve been binge watching the original Star Trek series, which I’ve never seen before in my life. Yesterday, we watched the episode with Kahn then watched Star Trek 2 to get some more of the Kahn saga. Actually, I’ve enjoyed the show and the movie more than I anticipated. Good thing my husband introduces me to nerdy shows 🙂

And… Sunday was my birthday (wahoo). But… since I gave my husband pneumonia, he has been down and out since the middle of last week. He was going to take me out but we couldn’t do much of anything. So, he bought me Chocolate Chip Cookie Dough ice cream and made me a Funfetti cake, minus sprinkles and frosting, for my birthday yesterday. We ate that and watched Star Trek. Not the fantastic birthday day I was hoping for but I applaud his efforts for trying to make it special and fun any way. And that’s all a girl can ask for. Oh, and not to be sick anymore. Do birthday wishes still come true at this age?

Kick Excuses to the Curb

Seriously, enough with the excuses on not being able to eat healthy or workout. No, this does not include actual, valid reasons for situations. I’m talking about just plain excuses thrown out to justify an unhealthy action….. For these, I have no sympathy.

      I forgot my lunch and had no choice but to stop by McDonald’s for a Big Mac and large fry.  

     I didn’t have time to cook a healthy meal so I ordered a pizza. 

It’s soooo hard getting up early to go to the gym.

Stop coming up with a million excuses how you can’t do something and start coming up with ways you can do something.

One + Four = Life | Feb 2016 (Part 2)

Welcome to another One + Four = Life posts! Honestly, the last half of the month was a little uneventful. Still a good couple of weeks, though I have been sick with either a mild cold or allergies. Never sure which one anymore.

Went to the spinal care doctor because I’ve been having back pain since November. This was my awesome getup before the x-ray (which revealed nothing abnormal). I swear these are 7-XL and made for someone 8 feet tall. I felt like a real-life hobbit. Laughing about the gown was the best part of that 3 hour trip. Yes, 3 hours. In a hospital. Lame city…..

 

 

Saw The Witch on Sunday. Don’t worry, no spoilers on the plot! Honestly, this is a total Redbox experience, not that I feel ripped off going to the theater. It was just not quite worth theater prices. I was confused by the beginning and the family being banned from their community (??) and a lot of the film was slow moving. The creepy parts were really creepy, just needed to be more fast-paced and creepy all the way through. Overall, just okay, but it got us out of the house.

It’s the little things in life….. Here’s our little girl, Savannah, being super cute as always. We flipped the covers over her head and she was peaking out. After our extensive Star Wars viewing over the last month, we instantly joked that she was secretly a Syth Lord.

Seriously, though, that face!!! Cute!!!

 

Switched up my workouts the last few weeks, doing new combinations (especially for lower body) and different moves. Oh… my…. god…. I swear my glutes and hams are sore EVERY… SINGLE… DAY. So I basically feel like this –>

 

 

One + Four = Life | January 2016

Sooooo…… I forgot about these One + Four = Life posts that I got into last year. These were pretty fun to do, though I may not get to them weekly. I’m hoping for bi-monthly because 1) other priorities and 2) my life just isn’t that exciting, sadly.

A few weekends ago, we went to Slamdance in Park City, which coincided with Sundance. If you don’t know it, look it up. Our first time there, didn’t see any movie stars other than the ones in Director’s Cut (which was crowdfunded by people like us). Crazy navigating the town and parking! We had some crappy pizza, thanks Red Bango… did some window shopping (too artsy for me) and watched the movie. It was a different experience but fun!

 

 

The beginning of the month, I had a fun girls’ night out to celebrate one of my best friend’s birthday. We went to Twiggs Bistro and Martini Bar. Had a pineapple martini (not a pic of my actual drink because I forgot to take one, but this is pretty close) and yummy food. I love going out with my two best friends! We don’t do it often enough but it always puts a smile on my face and makes me realize how lucky I am to have them in my life. Man, have we been through some crap….. LOL

This last weekend, we nerd-ed out! First, we kicked off the night with delicious wings from Wing Nuts Restaurant. We shared the bone-in wings with buffalo chips (not pictured), followed by equally amazing Sub Zero ice cream (not pictured). I love their brownie batter w/chocolate chips and cashews. Mmmmm….. Afterwards, we went to a local theater for a comedy-improv of Star Wars: The Force Awakens.

 

To finish out the weekend, and nerd out session, we went to see the actual Star Wars: The Force Awakens (again) in the theater. I really liked it the first time, in 3-D, but liked it even more this time. Perhaps because I caught some more humor and little things that I missed the first go-around. Seriously, this movie kicks ass!

 

 

Healthy Homemade Pizzas – Yum!!!!

A group of us went to a pizza cooking demonstration on Saturday, which was a blast! We got to try various types of pizza, some good and some just okay. A good night out with friends, regardless! But it left me craving more pizza. Go figure… So, we decided Sunday was a great time to make our own pizzas again. Love doing this! We decided to make chicken Alfredo pizzas for something different. Actually, the dough was pretty filling, so I could only eat half my pizza.

Finished pizzas. I could hardly contain my excitement, I wanted to dig in so bad!!

Super easy and yummy! Here’s what we used but you can choose any toppings. We like to mix it up!

– Low carb dough (can’t remember the brand we bought online) or a tortilla

– Light Alfredo sauce

– Toppings: pepperoni, chopped ham, shredded pre-roasted chicken and tomatoes.

– Garlic parmesan cheese

– 2 cookie sheets

– Vegetable oil spray

To make: Pre-heat oven to 400 degrees. Roll out dough (we just use our hands) on greased cookie sheet. One pizza per cookie sheet. Add sauce and then toppings to your liking. Bake for about 10-15 minutes, depending on how crisp you like the bottoms. We like them pretty crispy. Viola! Super easy, healthy pizzas!

Wine Tasting – Weekend Adventure in Boise

Drove to Boise, Idaho Thursday night for our long weekend of fun. Friday we went to the Boise zoo and took a short walk around the surrounding park. I say short walk because it was 100 degrees outside. Literally.

That evening, we went on a Chuck wagon dinner train ride that went along Snake River. They were selling wine bottles for $12 each so, of course, we had to get a few 🙂

And because we didn’t indulge enough on the train, we made a late night run to Black Bear Diner. Love this place!! We had pancakes, chicken fried steak, biscuits and gravy. Our bellies were so full but it was worth it.

At our second wine stop. Tried something unique called an Ice Wine, which was actually really tasty. I look super excited for the wine!

Saturday we did a wine tasting guided tour. This was a blast! It was just us and the couple who own the tour company, so we got the VIP treatment. We visited 5 wineries and tried over 30 different wines. Got a little tipsy but we weren’t driving so we didn’t care! LOL

Afterwards, the Italian place we tried for dinner was mediocre at best so we headed to Black Bear Diner for dessert. By this time, the owner and some of the workers recognized us and came over to chat. LOL We had shakes, apple cobbler and got a choc cream pie to go then headed to the Shakespeare play “The Secret Garden”. The play was just okay, not my favorite. Good thing the chocolate pie tasted amazing after we got back to the hotel.

And, because we’re kids in a candy store…. we went back to the diner for breakfast on Sunday before heading home. We stuffed ourselves with more pancakes, Bear Claw French toast and hot chocolate. We were so full by the time we left there, I was in a coma driving home.

After splurging in Mexico and again in Boise, I’m surprised I don’t have diabetes now! But, damn, those drinks and food were goooooood! 🙂

Fun in the Sun – Mexico All-Inclusive Vaca!

A little late, as we got back from Mexico almost 2 weeks ago but still wanted to share. Had an amazingly fun time!

We decided to try out two different all-inclusive resorts. The first as Occidental Grand Xcaret Resort; overall, it was average. We stayed here because it’s next to Xplor and Xcaret. The food at each restaurant was just average. Good thing we kicked off the afternoon with some drinks!

mexico 10Saturday was Xplor day, which is an adventure park. We started on the stalagmite rafting, followed by the off road jeep then the zip lines. All were so much fun, had a blast!

Beach looks better than it was.

Sunday was Xcaret, which is like an adventure park, zoo and beach combo. The “beach” wasn’t very impressive and there were way too many people. We didn’t stay in long. The zoo animals were cool to see, especially the bat cave. We had a bat block the entrance when we were trying to leave! LOL

Checked out of Occidental on Monday afternoon and headed to  The Royal. This was an adult only all-inclusive resort and was a little more “classy” than Occidental. When we booked the room, we were able to upgrade to a Master Suite for a good price. Our suite was 1300 sq. feet, complete with 2 bathrooms, Jacuzzi tub, dual head shower, kitchen with stocked bar, etc. It was amazing, I seriously loved this room!

We got wrangled into a bike tour that same afternoon, and after 4-5 banana mamma and pina colada’s, I ended up crashing (go figure…) and scraping my knee and cutting open my toe. Way to start out!

The next day we rented a jet ski for half an hour and did the fly board, which is like having jet packs on your feet and you get to hover over the water. Both were really fun. Fly board was hard to get the hang of but tons of fun. You can get 20-30 feet above the water which is exhilarating! The rest of the day was spent at the pool and the pool bar. More banana mamma and pina colada’s! 🙂

Wednesday we did a tour that consisted of snorkeling with the turtles, snorkeling in a cenote, lunch, zip lining and the Tulum ruins. The turtles was really fun, they’re huge! The cenote was cool but extremely cold. Good thing the tour company provided wet suits. Lunch was delicious, got to try an ancient Mayan dish. The zip lining was a little scary because the platform looked questionable and we had a stick for the break. It was fun though. The Tulum ruins were cool but the mosquitos really took away from the experience. Every few seconds, you were swatting them away. It was miserable, honestly. We actually left early.

Thursday was one of my favorite days. We spent the day on our cabana at the beach and at the pool. That night, we had dinner at the Chef’s Plate, which was included in our suite upgrade (it’s normally $80/person). It was a 5 course meal full of super delicious food, wine and special made drinks by the bartender. Afterwards, we did a couple’s massage in a gazebo on the beach. It was the most relaxing massage ever in my life.

Of course, we stuffed ourselves with food and alcohol every single day of this trip. I’m surprised we’re not each 500 lbs. after this vacation, though we did pack on a little weight 🙂 Flew home Friday afternoon, worked Mon-Thurs and then left for Boise. Super fun trips, sad that they’re over! Can’t wait to see what we plan for this fall! 🙂
