One + Four = Life | June 29

I’m a day late again but what can I say? I was busy relaxing yesterday! ūüôā Mexico was a blast, got back Friday night. Saturday we went to lunch and saw The Illusionists, which was a great show and a lot of fun. Fantastic meal! Sunday was our yard / house work day, followed by relaxation and watching tv.

mexicoOur first night in Mexico. We said “screw it” and kicked off our vacation with some much needed drinks. While playing foosball. It was a fun night ūüôā

lambs grillHad lunch at this little joint called Lamb’s Grill, in Salt Lake City. They have THE best bacon wrapped dates on this planet.¬†This time we had the dates (duh!), blueberry pancakes and the triple cheese grilled cheese. All of it was yummy!

showAfter Lamb’s Grill, we saw The Illusionists. The group has a handful of magicians all with different styles and acts. Had a lot of fun!

drinksOne of our friends came over and we made pina colada’s and strawberry daiquiri’s that same night.¬†The drinks¬†turned out okay, it was fun making them. We got tipsy and watched The Three Amigos. Super fun!

Taking Stock | June

So here’s a look into my June, another chapter down in the book called 2015.¬†Let me know what you think.

This month has been a whirlwind of craziness. It started off with a bang when I completed my first figure competition, winning 2nd in my division and 3rd in the open. The next few weeks were a flash of homework and adjusting back to “normal” life. Two weeks after the competition, we left for Mexico. Sadly, we came back last Friday (totally not ready!) but I’m glad that we had those few extra days to relax before heading back to the grind. I mean, work.

Making: healthy protein brownies. Yum!

Cooking: blueberry muffins, turkey burgers, low carb pasta, cookies with peanut butter and every other healthy food that we love but haven’t been able to have for a while!

Drinking: an in comprehendible amount of pina colada’s and banana mamma’s in Mexico.

Reading: I finished “Just One Year” and “Something Borrowed” this last week. Loved them both!

Wanting: the amazingly incredible lamb dish we had at the resort. So delicious!

Looking: for a way to retire way early so I can be on vacation every day.

Playing: a tune in my head.

Deciding: that I want to move to another country for a few years, just to experience something different. *sigh*

Wishing: I had a different job.

Enjoying: giving belly rubs to our little girl.

Waiting: for our friends to share the news that they’ve given birth to their daughter. Would love to see her before we leave tomorrow to Mexico!

Liking: my new Instagram account.

Wondering: how people live in Mexico with that humidity!

Loving: that I did so well at my competition, super proud of myself!

Pondering: ways we can pay off our house in 5 years instead of 15.

Considering: taking the certification test for personal training this year. I’m procrastinating.

Buying: tile (hopefully next month) for our kitchen back splash.

Watching: American Horror Story and House Hunters

Hoping: to build my social sites more.

Marveling: over the joy of a normal summer.

Cringing: at people.

Needing: some more tank tops!

Questioning: some things in my personal life.

Smelling: the turkey in the oven.

Wearing: my bathing suit daily in Mexico and loving it!

Following: new people on Instagram.

Noticing: that I’m much happier/positive when the sun is shining.

Knowing: more and more what I want out of life.

Thinking: that unicorns should be real.

Admiring: an old friend who is always positive and has a fierce drive to success.

Sorting: and getting rid of the clutter when possible.

Getting: really nervous to start my volunteer work in a few weeks

Bookmarking: things to do in Idaho for this weekend.

Coveting: some of the way too expensive clothing I see in magazines.

Disliking: inconsiderate people who talk during movies, shows and performances.

Opening: my eyes.

Giggling: over Last Week Tonight with John Oliver – that man is a true comedic genius!

Feeling: excited about this weekend.

Snacking: on protein powder and rice cakes, super yummy snack during the day.

Wishing: I could take another vacation soon!

Helping: others with diets and exercise. Love it!

Hearing: my little girl howl makes me laugh.

One + Life = Four | June 18

I’ve been a little behind on my life posts, these last few weeks have been pretty busy. So, here’s a quick recap of everything since my last post on June 7th. (Big breath!) Started adjusting back to “real” life after the comp, it’s still weird not working out as much but I’m loving the fact that I love being at the gym again and don’t see it as a chore. We had a BBQ with our friends last Wednesday, tried some elk burgers and saw their new (well, 6 month old) little boy. It was a fun few hours! Last weekend, we did some things around the house, checked out some tile for our kitchen backsplash and did some relaxing. This week has been spent getting ready for Mexico, we leave tomorrow!!! So excited!!

Okay, this is from¬†a few¬†Sundays ago¬†but it’s a cute pic that I wanted to share. After the gym, we decided to spend a little time at the local pool a few blocks from our house. It was fun walking around the little lagoon area and walking under the water. It was nice to enjoy the warm weather and spend time just kicking back with the hubs.

texas roadhouseWent to lunch with both of our parents and two of our very good friends. I love this place! And the company was great. It was a combo lunch, for my father-in-law’s birthday and an early Father’s Day for my dad since we’ll be gone on the actual day. It’s always great spending time with our wacky family and friends!

VideoAnd last night, I was fortunate to get recruited for some workout videos by an old friend who is super awesome. It was spur of the moment and I had tons of fun!Here’s a pic of one portion of the video. It will be used for marketing purposes for his personal training business. Really glad I was able to do this and, hey, it never hurts to get my face out in the world! ūüėÄ

flyingThis will be us tomorrow, on our way to Mexico! We’ll be staying at two different resorts in Playa Del Carmen – I can’t wait for some fun in the sun!!! After the stress of the last few months, between work and the competition, this is a much needed vacation and I’m super excited!

A “Text” Walking Lane – Seriously?!

While on the treadmill this morning, sans IPhone, I saw a news story about a “text” walk lane. My initial reaction was it must be some kind of joke or spoof on people who text and walk. Touch√©! It’s a real thing!

Now, I’ve certainly sent a text while in motion but very rarely. I do not make a habit of walking while texting. Other people do and apparently¬†now need their own lane so they can stop bumping into us folk who actually look up while walking. So what happens if you get stuck behind a slow walker and run into them because you’re face is buried in your own phone?

That’s not my only question. Is the world so self-absorbed and think they are really that important that they need to be on their phones 24/7? While walking? Because what you’re texting your friend is so important it must be done at that exact moment in time instead of calling so you can look forward and walk? Let me be the one to break it to you. You, nor what’s transpiring over that round of texts, is not THAT important. If it is, PICK UP THE PHONE AND HAVE A CONVERSATION.

Be courteous to those around you, for once, and pay attention to where you’re walking and quit thinking you’re super uber important enough to have your head buried in your phone, running into people, and that you require your own “lane” to do so. Get over yourselves.

Okay, enough of my rant on this ridiculous and completely absurd implementation. For shame, Utah, for shame!

Frittata Muffins – Recipe Courtesy of My Blogging Friend…

Okay, the above picture is NOT the actual frittatas that I baked. I get so excited when my food is ready that I usually forget to take a finished picture. But…. mine did look very similar to the picture, which I’m extremely proud of.

I got the recipe from my lovely friend and fellow blogger, Julie @ From City to Suburbs. Check her out, she’s amazing!

I tweaked the recipe, mostly because I didn’t have any peppers on hand and don’t like onions. I just used what I had in the fridge (have to use it before we leave this weekend!).

I cut up carrots, cherry tomatoes, kale and spinach and filled the¬†muffin cups about 2/3 to the top. I mixed 6 eggs with almond milk, pepper and salt and filled the cups. Because I cut up so many veggies, my version made 10 frittatas. In the future, I would fill the cups full of veggies and add more eggs. And¬†probably eat with toast or something else, as the frittatas weren’t as filling as I had hoped. Maybe I was just too hungry! But, they were still a success! My husband thanked me for making dinner and said he really enjoyed them (score!).

We love trying out new recipes and doing things to make them “our own”. This was a total win, can’t wait to make them again!! ūüėÄ

My Journey to the Stage ‘aka’ Scared Sh**less – Entry 12: Say Cheese!

Professional pictures are finally in and I’m (for the most part), satisfied. The pictures confirmed what I already knew… I need to work on my smiling posing ūüôā

Other than that, I couldn’t be happier and more proud of making it to the stage. Thanks again for following my journal AND my blog!

Quirks Are Us Thursday | Volume #6

quirksI like the word “quirk”; it’s quirky. A much better term than “weird” to describe¬†the little idiosyncrasies that make me, me.

Here are a few more quirks that make me, me. Share some of yours below, I would love to hear them!

bathroom1.¬†Restroom stalls. This¬†actually¬†goes way back into child hood.¬†In elementary school, I had “my” stall in the restroom. I have no idea why but¬†I always¬†used the same stall and would be devastated/furious when¬†someone else was in there. Didn’t they know it was mine? Fast forward to today and I’m¬†the same way. In certain¬†places, I have¬†“my” stall. Not sure if it’s based on location or comfort but I¬†play favorites. ¬†

dog2.¬†Licking. I hate when dogs lick. Anything. Especially their private bits. It¬†completely grosses me out¬†to hear a dog licking anything. I will¬†literally scold my dog when she does this. She likes to lick my husband’s watch, arm, face, her own crotch, anything….¬†The only thing I hate more than¬†my dog licking something, is her licking her own crotch in the middle of the night when she comes in from outside. Ugh!!!! ¬†

pens3. Blue pens. Not sure where this one came from either but I prefer blue pens. I will actually turn down free pens if they’re not blue. I only buy blue pens and will only use blue pens, unless there is no other option available. I hate using black pens.
